This exclusive gastronomic experience will take you on a sensory journey through the heritage of Baja-Med fusion cuisine paired with the finest selection of Bodegas Santo Tomás wines from Baja California, Mexico.
This six-course dinner is served in a refined atmosphere where you will enjoy a tasting of dishes perfectly curated by Chef Sylvain Desbois. The menu highlights local produce from Baja California, including fresh seafood including oysters, clams, and abalone among other spices and vegetables that flourish in the Baja climate. The flavors will transport you through influences from Mexico, the Mediterranean, and Asia. This fascinating blend of diverse cultures creates an innovative and provocative blend of taste and textures.
The wine pairings are from Bodegas Santo Tomás, founded in the late 1700s by Dominican Friars, making it one of the oldest wineries in the American Continent and named after Mission de Santo Tomas Aquino. Today Bodegas Santo Tomás’ wines have been awarded over 160 medals across multiple competitions in Europe, The United States, and Mexico.
Bodegas Santo Tomás has vineyards in three different valleys in the State of Baja California, each with distinct microclimates and soil characteristics, allowing for a wide range of varietals such as Chardonnay, Chenin Blanc, French Colombard, Barbera, Mision, Cabernet Sauvignon, Syrah, Merlot, Tempranillo, and more.
Its most outstanding wines are UNICO and DUETTO. UNICO is a unique blend of Cabernet Sauvignon and Merlot. Balanced and mature with a velvety body, it features concentrated aromas of berries, notes of cocoa and vanilla, spices and flowers, and a touch of leather, wood, and menthol. DUETTO is a blend of Cabernet from the Santo Tomás Valley and Tempranillo from the San Vicente Valley. From the oldest vineyards in northwestern America, it is accented with aromas of black fruits and notes of sandalwood. Expressive, velvety, and rich in structure, it is an elegant evening wine.
