Our seven-course menu artfully curated by our Executive Chef Sylvain Desbois features seasonal and locally sourced ingredients, all thoughtfully paired with Mexico’s finest wines from Bodegas Santo Tomás, the oldest winery in Baja California.
As the inventive Mexican dishes are served, our sommelier will guide you through the intricacies of each pairing and share the history of Santo Tomás with you. Located in the Valle de Santo Tomás, Bodegas Santo Tomás Vineyard is considered the home of Mexico’s most superior quality wines, with over 125 years of uninterrupted production and boasting nearly 1,000 acres of vineyard and 120 olive trees. This valley has a slightly cooler climate than most of the region, allowing the grapes to slowly ripen throughout a long growing season. It is now regarded as one of Mexico’s largest vineyards, producing 125,000 cases of wine per year across 40 different labels.
